Yangtang Guan. A simple and unadorned
shop that was purportedly opened
by an ex-Chinese intelligence officer,
Beiping Yangtang Guan doesn’t do much
else aside from mutton soup, and its broth with slices of
mutton is one of our favourites.
Bowls come with or without noodles
(25RMB) and the huoshao (2RMB)
are flaky and heavily coated with
sesame, a perfect nutty sponge to
soak up every last drop of soup.
